A long-day onion, Golden Morning matures in early fall in the intermountain west and has plenty of time to dry down for storage. Sweet and dense, it is delicious and solid for up to 10 months in storage! Pickled, roasted, caramelized, grilled, sautéed, raw: onions are in just about everything savory that we cook, forming foundational layers of flavor.Let us remind you that this is no humble old regular onion: after all the years of work that went into creating Golden Morning, it certainly deserves to be the star of the show. Roasted whole, they can be the focal point of dinner: cut the tops off, put them in a baking pan, add butter or olive oil or both, salt, pepper, and rosemary, thyme, tarragon, or sage. Maybe even some balsamic vinegar. Roast for 30+ minutes (cooking time depends on how big the onions are) or until they look really soft and brown and done. Put the pan in the middle of the table and surround it with supporting foods: bread, salad, potatoes, meat.
